Ingredienti

  • 320 g Arborio rice
  • 700 ml water
  • 500 ml tomato sauce
  • 3 tbsp extra virgin olive oil
  • 1 garlic clove
  • 40 g grated Parmigiano Reggiano
  • Fresh basil leaves
  • Salt to taste

Istruzioni

  • Heat the olive oil in a saucepan and lightly brown the garlic.
  • Add the tomato sauce, a pinch of salt, and a few basil leaves.
  • Simmer the sauce for 15 minutes over low heat.
  • Remove the garlic.
  • Add the water and bring to a gentle boil.
  • Stir in the rice and cook, stirring occasionally.
  • Continue cooking until the rice is tender and has absorbed most of the liquid, about 15–18 minutes.
  • Stir in the grated Parmigiano.
  • Let the rice rest for 2 minutes before serving.
  • Garnish with fresh basil and serve hot.

Note

This dish is often prepared with homemade tomato sauce. For a quicker everyday version, the rice can be replaced with small pasta shapes such as puntine (orzo), stelline, tempestina, or other tiny pasta traditionally served to children. The pasta version cooks faster and has long been a staple comfort food in many households.
