Ingredienti

  • 4 large bell peppers
  • 200 g breadcrumbs
  • 100 g grated Parmigiano Reggiano
  • 50 g Pecorino Romano grated
  • 2 eggs
  • 2 tablespoons fresh parsley finely chopped
  • 2 garlic cloves minced
  • 4 tablespoons extra virgin olive oil
  • 100 ml milk
  • Salt to taste
  • Freshly ground black pepper to taste

Istruzioni

  • Wash the peppers, cut off the tops, and remove the seeds and membranes.
  • In a large bowl combine the breadcrumbs, Parmigiano Reggiano, Pecorino Romano, parsley, garlic, eggs, olive oil, and milk.
  • Mix until a soft but compact filling forms. Season with salt and black pepper.
  • Fill each pepper generously with the mixture without pressing too tightly.
  • Place the peppers in a lightly oiled baking dish.
  • Drizzle with a little extra olive oil and add a few tablespoons of water to the bottom of the dish.
  • Bake in a preheated oven at 180°C (350°F) for 40 to 45 minutes, or until the peppers are tender and the filling is golden brown.
  • Allow to rest for a few minutes before serving.

Note

For a richer version, add diced salami, cooked ground beef, tuna, or mozzarella to the filling.
The peppers can be served hot, warm, or at room temperature.
